Over the past five
years, Moshi Moshi has
been working hard to reduce the
environmental footprint of its restaurants.
One of the ways we’ve done this is to create our
menu around seasonal and local ingredients, which is
how our “Clear Conscience” sushi set came about. For
this we use whatever fish our Cornish fisherman
Chris Bean has caught on any given day. Doing
this, we can ensure the fish is fresh, that it
has been sustainably caught, that there’s
no wasteful by-catch, and that we
are supporting a local fishing
community into the bargain.
It’s a winning formula for
everyone – including our
customers, because the
Clear Conscience
set has become
one of our
most popular
sushi sets.
